Miso Soup

SERVES 4 | FINISH IN 30 minutes
   


Ingredients
  • 1 package Veggiecraft Farms Sweet Potato Spaghetti
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, sliced
  • 1 garlic clove, minced
  • 8 cups vegetable broth
  • ½ cup white miso paste
  • ¼ cup hot water
  • 4 ounces shiitake mushrooms, thinly sliced
  • 4 cups baby spinach
  • 1 cup bean sprouts
  • 1 bunch scallions, sliced

Directions
  1. Cook the spaghetti according to the package instructions. Drain and rinse with cold water. Set aside.
  2. In a large pot, heat the oil over medium heat. Add the onion and garlic and sauté about 3 minutes.
  3. Pour in the broth and bring to a simmer.
  4. Add the mushrooms and cook until tender, about 5 minutes.
  5. In a small bowl, whisk the miso and hot water.
  6. Turn off the heat and stir in the cooked noodles, spinach, and miso.
  7. Serve with bean sprouts and scallions.
