Veggie Mac ‘N Cheese with Veggie-Based Penne

SERVES 4 | FINISH IN 55 minutes
   


Ingredients
  • 1 box Veggiecraft Farms Cauliflower Penne
  • 1 1/2 tbsp butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 2 cups skim milk
  • 1 cup fat free vegetable broth
  • 2 cups sharp cheddar cheese
  • 12 oz. fresh broccoli florets
  • 2 tbsp grated parmesan cheese
  • 1/2 tsp salt and pepper
Directions
  1. In a large pot, bring 4-6 quarts of water to a rolling boil. Add 1 tbsp of salt to boiling water (optional).
  2. Add Veggiecraft Farms penne, cook uncovered for 7-8 minutes (cook to desired tenderness, but DO NOT OVERCOOK), and stir occasionally.
  3. Strain penne in colander and continue with the remaining recipe steps.
  4. Cook Veggiecraft Farms penne and broccoli together in a large pot of salted water, according to package directions.
  5. Preheat oven to 375°F.
  6. Melt butter in a large skillet. Add onion and cook over low heat for 2 minutes.
  7. Add flour and cook another minute, or until the flour is golden and well combined.
  8. Add milk and chicken broth and whisk, raising heat until it comes to a boil. Cook for about 5 minutes, or until the sauce thickens. Season with salt and pepper.
  9. Remove sauce from heat and add cheese. Mix until the cheese is melted.
  10. Add cooked pasta and broccoli and mix well. Pour into a baking dish coated with cooking spray. Top with grated cheese and spray more cooking spray on top.
  11. Bake for 15-20 minutes.
