Spicy Veggie-Based Penne

SERVES 4 | FINISH IN 55 minutes

  • 1 box Veggiecraft Farms Cauliflower Penne
  • cloves garlic, minced
  • red bell peppers, julienned
  • yellow bell peppers, julienned
  • chili pepper, minced
  • 2 pounds plum tomatoes, chopped
  • basil leaves
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt and pepper
  1. In a large pot, bring 4-6 quarts of water to a rolling boil. Add 1 tbsp of salt to boiling water (optional).
  2. Add Veggiecraft Farms penne, cook uncovered for 7-8 minutes (cook to desired tenderness, but DO NOT OVERCOOK), and stir occasionally.
  3. Strain penne in colander and continue with the remaining recipe steps.
  4. In a skillet, sauté garlic in olive oil, then add bell peppers. Cook for a few minutes.
  5. Add the chili pepper and tomatoes and cook over medium heat for 20 minutes.
  6. Season sauce with salt and tear in basil leaves.
  7. Add cooked pasta to the sauce skillet.
  8. Toss over medium heat to combine, then serve.
