Pesto Penne with Chicken and Cherry Tomatoes

This gluten-free family dinner takes minutes to make and is packed full of delicious flavor. Tender chicken, juicy cherry tomatoes and Veggiecraft Farms Penne Pasta made with zucchini are smothered in a cheesy basil pesto sauce. Pesto Penne with Chicken and Cherry Tomatoes

Ingredients
  • 1 package of Veggiecraft Farms Penne Pasta made with Zucchini
  • 2 tbsp. extra virgin olive oil
  • 2 boneless skinless chicken breasts, chopped into ½ inch pieces
  • 1 pint cherry tomatoes, halved
  • 3 cloves garlic, minced
  • ½ cup basil pesto
  • ¼ cup Parmesan cheese, grated
  • ½ tsp. salt
  • ¼ tsp. black pepper

Directions
  1. Cook the pasta according to the package directions. Drain and set aside.
  2. Add the extra virgin olive oil to a large skillet over medium heat. Add the chicken, cherry tomatoes and garlic and stir to combine. Sauté for 7 to 10 minutes, or until the chicken is cooked through.
  3. Stir in the cooked penne, basil pesto, Parmesan cheese, salt, and pepper. Heat over medium heat for 3 to 4 minutes, stirring often. Serve hot.
