Meatless Veggie-Based Spaghetti Carbonara

SERVES 4 | FINISH IN 25 minutes

  • 1 box Veggiecraft Farms Cauliflower Spaghetti
  • 1 tbsp unsalted butter
  • garlic cloves, minced
  • 1 cup grated parmesan cheese
  • large eggs, beaten
  • 1/4 tsp salt, to taste
  • 1/8 tsp freshly ground black pepper, to taste
  1. In a large pot, bring 4-6 quarts of water to a rolling boil. Add 1 tbsp of salt to boiling water (optional).
  2. Add Veggiecraft Farms spaghetti, cook uncovered for 7-8 minutes (cook to desired tenderness, but DO NOT OVERCOOK), and stir occasionally.
  3. Strain spaghetti in colander and continue with the remaining recipe steps.
  4. Melt butter in a large skillet over medium heat. Add garlic and sauté for 1 minute.
  5. When the Veggiecraft Farms spaghetti is cooked, add it to the skillet and mix with garlic and butter.
  6. Add a ½ cup of cheese and, using tongs, mix until well coated.
  7. Add the eggs and mix for 1 minute.
  8. Add remaining cheese and salt and pepper.
  9. Toss for 1 minute and serve in a warm bowl.
