Lazy Lasagna with Penne

Made entirely on the stovetop, it’s loaded with ground beef, tomato sauce, spices, 3 kinds of cheese and zucchini penne pasta. Plus, it’s gluten-free!

Lazy Lasagna with Penne

Ingredients
  • 1 box Veggiecraft Farms Penne Pasta made with Zucchini
  • 1 lb. lean ground beef
  • 1 sweet onion, chopped
  • 3 cloves garlic, minced
  • 2 ¾ cups tomato sauce
  • 2 tbsp. tomato paste
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • 2 cups baby spinach
  • 2 cups mozzarella cheese, shredded
  • 1 cup ricotta cheese
  • ¼ cup Parmesan cheese, shredded
  • 1 tbsp. fresh basil, chopped

Directions
  1. Cook the penne pasta according to the package directions. Drain and set aside.
  2. Add the lean ground beef, onion, and garlic to a large skillet over medium heat. Cook, stirring often, until the beef is browned, and onions are softened, about 7 to 9 minutes.
  3. Stir in the tomato sauce, tomato paste, dried oregano, salt, and pepper. Cook for 10 minutes on medium heat, stirring often.
  4. Stir in the baby spinach, cooked penne, mozzarella cheese, ricotta cheese, Parmesan cheese and basil. Continue to cook for 3 to 4 minutes or until the cheese is melted and the mixture is heated through. Serve hot.
