Prepare Veggiecraft Farms® Rice Made with Cauliflower per directions on the box. Set aside.
Heat the grill to MEDIUM-HIGH heat.
Season the mahi-mahi filets on both sides with salt and pepper.
Place the mahi-mahi filets on the grill and cook for 4-5 minutes on each side. Set aside.
Heat a large sauté pan over MEDIUM heat.
Add the sliced almonds to the pan and sauté for 2-3 minutes. Add the prepared Veggiecraft Farms® Rice Made with Cauliflower to the pan and sauté for another 2-3 minutes.
Add the green and Kalamata olives and chopped parsley to the pan and combine together.
Plate the prepared Veggiecraft Farms® Rice Made with Cauliflower mixture into 4 portions. Top each portion with a mahi-mahi filet and garnish with a lemon wheel.
