Ingredients:

  • Veggiecraft Farms Penne
  • 1 1/2 Tbsp butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 2 cups skim milk
  • 1 cup fat free vegetable broth
  • 2 cups sharp cheddar cheese
  • 12 oz fresh broccoli florets
  • 2 Tbsp grated parmesan cheese
  • Cooking spray
  • Salt and pepper to taste

Preparation:

  • Cook Veggiecraft Farms penne and broccoli together in a large pot of salted water, according to package directions. 
  • Preheat oven to 375°F.
  • Melt butter in a large skillet. Add onion and cook over low heat for 2 minutes.
  • Add flour and cook another minute, or until the flour is golden and well combined. 
  • Add milk and chicken broth and whisk, raising heat until it comes to a boil. Cook for about 5 minutes, or until the sauce thickens. Season with salt and pepper.
  • Remove sauce from heat and add cheese. Mix until the cheese is melted. 
  • Add cooked pasta and broccoli and mix well. Pour into a baking dish coated with cooking spray. Top with grated cheese and spray more cooking spray on top.
  • Bake for 15-20 minutes.
