Ingredients:

  • 1 tablespoon olive oil
  • 1 large shallots, thinly sliced
  • 3/4 teaspoon freshly ground black pepper
  • 1 pound asparagus, sliced into 1-inch pieces
  • 8 ounces of Veggiecraft Farms Penne Pasta
  • 3 cups water
  • 1 cup frozen peas
  • 1 tablespoons fresh lemon juice, plus 1 teaspoon finely grated lemon zest
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons unsalted butter

Preparation:

  • Heat the oil over medium heat in a large sauté pan or large pot.
  • Add the shallots, salt, and teaspoon pepper. Cook and stirring often until the shallots soften.
  • Add the asparagus, pasta, water, and peas. Cover and bring to a boil.
  • Reduce heat to simmer, stirring until the pasta is just tender.
  • Remove from the heat once there is a small amount of water left – only enough to create a sauce. Stir in the lemon juice and zest, parmesan cheese, and butter. Serve warm with Veggiecraft Farms pasta and enjoy!
