Ingredients:

  • ½ tsp olive oil
  • 2 garlic cloves
  • Grated parmesan cheese
  • Basil
  • Handful of pine nuts
  • Salt and pepper (to taste)
  • Veggiecraft cauliflower spaghetti

Preparation:

  • Combine basil leaves, garlic, cheese, and half of your pine nuts to a blender or food processor. Blend until a coarse mixture.
  • Switch to blending on low and slowly pour in your olive oil.
  • Add salt and pepper to taste.
  • Cook spaghetti according to packaging instructions. Once finished, pour pesto over it and toss.
  • Top with the rest of your pine nuts and any other toppings you enjoy (ex: tomatoes, cheese).
