Ingredients:

  • 1/4 cup virgin olive oil
  • 1 onion (we prefer finely diced)
  • 2 bay leaves
  • 1 teaspoon chopped fresh oregano
  • 2 garlic cloves (roughly chopped is ok!)
  • 2 to 3 teaspoons salt (to taste)
  • 2 tablespoons tomato paste
  • Two 28-ounce cans whole tomatoes (chopped up and with their liquid)

Preparation:

  • Heat the olive oil in a large pot over medium heat.
  • Add the onions, bay leaves, oregano, garlic, and salt and cook until the items are soft (stirring often).
  • Add the tomato paste and continue cooking for around 3 to 5 minutes.
  • Then, add the canned tomatoes and stir constantly until the sauce begins to boil.
  • Lower the heat and simmer for 1 hour, stirring often to prevent the sauce from burning.
  • Taste and season with additional salt, if desired. Remove the bay leaf before serving, and add basil leaves for garnish. Serve warm with Veggiecraft Farms pasta and enjoy!
